Beetroot Salad
Serves 6
Ingredients
- 500g conserved beetroots, preferably sliced
- Half a red onion (or a whole one, to taste)
- A apple (should be a firm one)
- 1 table spoon of Dijon Mustard
- 100ml Mayonnaise (Veganaise works just fine if prefered)
- 100ml Creme Fraiche
- Salt and Black Pepper to taste
Steps
- Let the beets drain well. (But don’t rinse them off.)
- Chop the beets roughly.
- Peel and finely chop the onion.
- Finely chop the apple
- Mix beets, onion and apple well in a bowl.
- Add Dijon Mustard, Mayonnaise and Creme Fraiche. Mix well.
- Add salt and pepper to taste.
- Put it in the fridge to let it stand for ~30 minutes to get cool and firm.
